Dada a tradição do azeite em Portugal, os seus hábitos de consumo em geral não foram efectivamente estudados, o que leva à adopção de critérios de senso comum por parte de produtores, e retalhistas, na formulação de estratégias de marketing. Tendo em conta este contexto, este estudo propõe a análise dos critérios mais importantes na compra de azeite, seja ao nível do mercado grossista, seja ao nível do consumidor, procurando através de diversos instrumentos aferir quais são as características que se traduzem, ou poderão traduzir, em valor acrescentado na comercialização deste produto. A informação analisada foi recolhida em duas fontes: através de um guião de entrevista, junto de profissionais da distribuição; e através de um inquérito “online” ao consumidor. O preço revelou ser o critério mais importante no mercado retalhista, enquanto a categoria do azeite, a origem, e o preço se revelaram como os mais importantes no mercado retalhista; ABSTRACT: Olive oil is a highly traditional product in Portugal. Therefore, its consumption habits were not effectively studied. This should be the main reason for the general use of common sense criteria by producers and retailers in the formulation of marketing strategies. This study proposes the analysis of the most important criteria in olive oil buying, in the whole sale and retail markets, through the utilization of specific instruments. The results are expected to identify the product´s attributes that can be translated into added value in its commercialization. The information was gathered through specific sources: the distribution professionals, utilizing an interview, for the wholesail analysis, and through the consumer, for the retail market analysis, utilizing an online survey. The most important criteria verified for the whole market was the price. The most important criteria verified for the retail market were the category, the origin, and the price.
