Design and characterization of a cheese spread incorporating osmundea pinnatifi...

Faustino, Margarida; Machado, Daniela; Rodrigues, Dina; Andrade, José Carlos; Freitas, Ana Cristina; Gomes, Ana Maria

Marine algae have been emerging as natural sources of bioactive compounds, such as soluble dietary fibers and peptides, presenting special interest as ingredients for functional foods. This study developed a cheese spread incorporating red seaweed Osmundea pinnatifida extract and subsequently characterized it in terms of nutritional, pH, and microbiological parameters and bioactivities including prebiotic, anti...

The role of cereals in the industry of plant-based foods

Barbosa, Joana Cristina; Rodrigues, Dina; Almeida, Diana; Machado, Daniela; Franco, Isabel; Inácio, Joana; Freitas, Ana Cristina; Gomes, Ana Maria

Current trends in human feeding promote a more plant-based diet, for several reasons [1]. Ethical and environmental concerns are among the most common reasons why people chose to avoid animal-based products [2], [3]. Also, there is an increasing perception that the excessive consumption of animal-based products is associated with higher risk of developing chronic diseases [4]. Thus, the demand for innovative an...

Sargassum muticum and Osmundea pinnatifida Enzymatic Extracts: Chemical, Struct...

Rodrigues, Dina; Costa-Pinto, Ana R.; Sousa, Sérgio; Vasconcelos, Marta W.; Pintado, Manuela M.; Pereira, Leonel; Rocha-Santos, Teresa A. P.

Seaweeds, which have been widely used for human consumption, are considered a potential source of biological compounds, where enzyme-assisted extraction can be an efficient method to obtain multifunctional extracts. Chemical characterization of Sargassum muticum and Osmundea pinnatifida extracts obtained by Alcalase and Viscozyme assisted extraction, respectively, showed an increment of macro/micro elements in ...

Use of coffee by-products for the cultivation of Pleurotus citrinopileatus and ...

Freitas, Ana C.; Antunes, Mariana B.; Rodrigues, Dina; Sousa, Sérgio; Amorim, Manuela; Barroso, Maria F.; Carvalho, Ana; Ferrador, Sandra M.

Incorporating spent coffee grounds (SCGs), a by-product from coffee brewing, in growth substrate of beneficial edible mushrooms is an approach that has to be further studied due to its potential positive outcomes: environmental impact mitigation, production costs reduction and beneficial impact on consumer health. Hence, cultivation of Pleurotus citrinopileatus and Pleurotus salmoneo-stramineus was tested using...

Bioactive polysaccharides extracts from sargassum muticumby high hydrostatic pr...

Rodrigues, Dina; Freitas, Ana C.; Queirós, Rui; Rocha-Santos, Teresa A. P.; Saraiva, Jorge A.; Gomes, Ana M. P.; Duarte, Armando C.

Sargassum muticum is an important source of bioactive polysaccharides; hence, high hydrostatic pressure (HHP) was used to improve their extraction efficiency. Response surface methodology and a Box-Behnken full factorial design were employed to assess and optimize the effects of extraction conditions on the yield, total sugars, total sulfated sugars and antioxidant activity of S. muticum extracts. The extractio...

Chemical and structural characterization of Pholiota nameko extracts with biolo...

Rodrigues, Dina; Freitas, Ana C.; Sousa, Sérgio; Amorim, Manuela; Vasconcelos, Marta W.; Costa, João P. da; Silva, Artur M. S.

Edible mushrooms including Pholiota nameko are excellent sources of extractable bioactive compounds with much to explore. Enzymatic extractions with Cellulase and Viscozyme were responsible for highest extraction yields (67-77%). No strong antioxidant activity was observed although extracts were able to scavenge ABTS(+) and OH(+). Potential prebiotic activity was observed in all extracts, some increasing 1.4-2 ...
