The capitulum constituents (stigma, corolla, bracts, pappus, and receptacle) of seven cardoon cultivars were studied for their polyphenolic composition and bioactive properties. Fifteen phenolic compounds were identified, secoiridoid, secoxyloganin, and apigenin-O-hexuronoside in higher concentrations.
