No. of bitstreams: 0 Previous issue date: 2021-04-01; The xylanolytic enzyme complex hydrolyzes xylan, and these enzymes have various industrial applications. The goal of this work was to characterize the endoxylanases produced by the thermophilic fungus Rasamsonia emersonii in solid-state cultivation. Tests were carried out to evaluate the effects of pH, ...

Keratinases are proteolytic enzymes with a particular ability to cleave peptide bonds in keratin, and in other proteins. Due to their broad-spectrum of activity, keratinases are considered viable substitutes for chemical and thermal treatments of proteinrich industrial by-products. Among these protein residues, special attention has been given to keratinous materials (feathers, hair, horns, etc.), which disposa...

A protease from the fungus Mucor subtilissimus URM 4133, capable of producing bioactive peptides from goat casein, was purified. SDS-PAGE and zymography showed a molecular mass of 30 kDa. The enzyme was active and stable in a wide pH range (6.0–10.5) and (5.0–10.5), respectively. Optimum temperature was at 45–50 °C and stability was above 80 % (40 °C/2 h). Activity was not influenced by ions or organic substanc...

Hydrophobic carriers can be used to improve the activity, stability and other properties of enzymes. Physical agents, like ultrasound, may also contribute to improving the dispersion and collision of the reagent molecules, decreasing the reaction time and intensifying the catalytic process. However, its effect on the enzyme activity and reaction selectivity is still not entirely understood. Here, enzyme modulat...

A balanced diet is one of themainstays ofiherapyfor the prevention of the oxidative stress, which if cannot beeliminated, at leastcan be controlled. Food antioxidants may help intrinsic antioxidant mechanisms to fight against oxidative stress. Several mushroom species have been pointed out as sources of antioxidant compounds, besides their nimportant nutritional value. Agaricus blazei and Lentimrs edodes are am...

Several mushroom species have been pointed out as sources of antioxidant compounds, besides their important nutritional value. Agaricus blazei and Lentinus edodes are among the most studied species all over the world, but those studies focused on their fruiting bodies instead of other presentations like powdered preparations used as supplements. In the present work the chemical composition (nutrients and bioact...
