O objetivo deste trabalho é o de caracterizar e descrever os atributos, consequências e valores na prática habitual de consumo slow food e compará-los com os pressupostos institucionais desse movimento. Entrevistas com 38 participantes foram feitas em Brasília, Brasil. Os dados foram analisados por meio da técnica Laddering. Foram analisadas as dez dimensões identificadas na revisão da literatura e sua associação com os atributos e consequências correspondentes em dois momentos, em feiras e em restaurantes; as práticas de consumo nas duas Ladderings; e, por fim, a comparação entre as duas Ladderings, feiras e restaurantes. A ida dos consumidores as feiras está fortemente relacionada aos valores Universalidade, Segurança e Hedonismo, enquanto nos restaurantes, os valores Hedonismo, Estimulação e Benevolência se mostraram mais evidentes. Além disso, as práticas de consumo nos dois lugares tiveram resultados diferentes e mudam à medida que o lugar também muda. Este trabalho contribui para a literatura sobre o slow food, consumo de feiras e consumo de restaurantes, trazendo novas perspectivas de valor para a comercialização de produtos alimentares dentro das categorias de feiras e restaurantes alinhados a esse movimento.
The purpose of this dissertation is to characterize and describe the attributes, consequences and values in the habitual practice of slow food consumption, and compare them with the institutional assumptions of this movement. Interviews with 38 participants were made in Brasilia, Brazil. The data were analysed using the Laddering methodology. The ten dimensions identified in the literature review and their association with the corresponding attributes and consequences were analysed in two moments, in fairs and in restaurants; the consumption practices in the two Ladderings; and, finally, the comparison between these two Ladderings. Consumers' going to the fairs is strongly related to the values of Universal, Security and Hedonism, while in restaurants, Hedonism, Stimulation and Benevolence values are more evident. In addition, the consumption practices in the two places have had different results and they change as the place also changes. This research contributes to the literature on slow food consumption based on fairs and restaurants, bringing new perspectives of value for the commercialization of food products within the categories of fairs and restaurants aligned with movements such as slow food.
