Enogastronomy as a tourist product: territorial dynamics in Vale dos Vinhedos- RS/Brazil
| Resumo: | In increasingly fast-paced times, productive territories tend to adapt themselves to consumption new models and patterns, sometimes incorporating innovations, sometimes reaffirming their traditions. In this background, Enogastronomy searches equalize a regional reaction in offering specific products approaching globalization processes. Enogastronomy is the association of food and wine segments supported by three pillars: farmers, companies (wineries and restaurants) and territory where theoretical, technical and pratical knowledge are applied and developed, providing especific products with quality to the final consumers. Comparably with other economic sectors, Enogastronomy is also influenced by the dialectical relationship between global and regional dimensions, not only in the territorial identity development process, but also in the individuals development that act at the regional context. This paper analyzes the Vale dos Vinhedos Valley, Rio Grande do Sul , Brazil Enogastronomy as a tourist product, considering its territorial dynamics. As a result from the field research, it was observed that the region pursues to incorporate elements that allow its innovation development in products and processes preserving simultaneously very solid ethnic cultural identity bases. The Enogas tronomy dynamic and tourism reinforce themselves in a strengthen endogenous process and of their supply chains, contributing with the established social values continuity and developing local economy. |
