| Resumo: | This report concerns an internship that occurred on a fruit factory in the West, the Frutoeste, on the period between March and August 2015. In Frutoeste the primary focus are two fruits, the lemon and the Rocha pear. Regarding its facilities, Frutoeste is a co-operative based on two floors. The second floor has got the administration services and the first floor has got the production. The production area is divided depending on the phases of preparation and also depending on the fruit that is being packed. The lemon and the Rocha pear are fruits with very distinct physiological behaviours, which reflects itself on their conditions and time of conservation. The lemon is a fruit that easy degradation and as such it does not stay at the factory for a long time. On the other hand, the Rocha pear is a very resistant fruit that can endure for long periods in storage. Although there have been many problems regarding its conservation. An analysis of the production of both the Rocha pear and lemon from 2014 was conducted during the internship. There was also the opportunity to follow the reception and packing of the 2015 Rocha pear. When the Rocha pear is received, the state of maturation of the fruits is verified through visual observation and non destructive tests (QS-200) or destructive tests (penetrometer). Frutoeste received approximately 858 tons of lemons on the year 2014. And this lemon received, 62,8% was sold in fresh, 33,9 for industry. The remaining 3,3% are product losses. On the specific case of the Rocha pear, Frutoeste received approximately 9 thousand tons of this fruit in the 2014 season. In this case, 88,7% was sold fresh and 8% went to the industry. Some fruits went also to animal feeding (1,9%) and there was a waste of 1,5%. |
