Resumo:The wine sector annually produces about seven million tons of residues and by-products such as grape marc, lees, seeds and the stalk. If these materials are mismanaged they can have a strong environmental impact. Moreover, some of these materials may have great potential through their physical and chemical characteristics, which may be used for others purposes. A strategy plan was presented, containing management alternatives, for each residue produced during one year campaign of wine production. To reach these goals we performed a survey for identification and characterization of all residues produced from the winery activity and a life cycle analysis of the product using software SimaPro to assist in choosing the best solutions to adopt. Through such strategies, implementation of specific legislation and voluntary attitudes as ISO's, it is possible to reduce the impact of human activity and lead enterprises to a more sustainable attitude towards the market at environmental, social and economic levels. This strategy may also allow reducing environmental impacts, by-products recovery, reduce landfill costs, optimize processes and to get some economic return
