Inspecção Sanitária. Principais causas de rejeição de carcaças e visceras de reses e respetivo impacto económico

Resumo:The sanitary inspection in the slaughterhouse is a veterinarian act that plays a key role in consumer protection and ensuring public health. This activity is based, mainly, on ante-mortem examination of the animals and post-mortem examination of the carcass and the respective viscera’s. In these actions are often detected pathological conditions that adversely compromise the financial sector's productivity. The practical component of this work aimed to closely monitor the health practices and decisions of various teams, conducting a survey the major diseases affecting the carcases and offal disapproved of the analyzed animals and thus present the financial impact of these actions. In the present study we found that the small ruminants were the animals that had a higher percentage of carcass rejection and disapproval organs in all species. That could be avoided if were guaranteed the perfect health of the animals in primary production. Despite the impact of the shares of Sanitary Inspection to the economic sector, the consequences of a reality without these features become more heavily as it would undermine public health and welfare of all consumers.
